J’s Favorite Chicken and Rice

First – I’m a bit late on this weeks tasteful Thursday – Sorry! 🙂 This week I decided to go with J’s favorite dinner.  It’s quick, easy, and super tasty.  In fact, he loves it so much that it’s one of those meals he’ll even make when he’s left to fend for himself. 🙂

Mostly my chicken and rice recipe is a mock of that which cambells has to offer with a touch of some yummy additions.  So whether you are taking this to the next pot luck or fixing it all for yourself.  This is definitely a winner in my house.  Without Further ado…

Chicken and Rice Casserole:

Whatcha need:

1 Can of Cambells Cream of Chicken Soup
1 Can of Water
1/3 cup of Sour Cream
3/4 Cup of Rice
1 lb of Chicken breast – I cut mine into cubes but you can leave them whole or even use tenders!
1 can of green beans  – You can also used mixed veggies or frozen veggies or your favorite veggies – like broccoli. 🙂
1/2 cup minced onions – J does not care for onions so I actually substitute with 1/2tsp. of onion powder.
1/4 tsp. of garlic powder
Salt and Pepper to taste… we use lots of pepper around here because J is a pepper fanatic. 🙂

Additionals: 1/2-1cup of cheese – I like to use a mix of chedder and colby jack.  Whatever you prefer works. If you aren’t a cheese fan leave this out.  J doesn’t like much cheese so I will just sprinkle some on the top because of my love for it.

How ya gonna make it:

1. Heat the oven to 375°F. Stir in ALL ingredients (including cheese if you LOVE cheese – save some for the top!)  in an 11 x 8 x 2-inch baking dish (or what we just call a casserole dish around our house – its a traditional 9×13).
2. Bake for 50 minutes or until the chicken is cooked through and the rice is tender. Top with cheese. Let the casserole stand for 10 minutes. Then serve!  YUMMY!


( I used broccoli in this one.  I was taking it to a friend who LOVES broccoli and knew it would be a hit.) 🙂


(This is Cambells version – notice they kept their chicken whole and used frozen mixed veggies!)

(Yummy! – this one has peas and green beans – a mix of both mine and J’s fave!)
